Ingredients:
- 1 chicken breast
- 4 cups of arugula
- 1/4 cup shaved almonds
- 1/4 cup cranberries
- 1/4 shaved parmesan (optional)
- 3 tbs of olive oil
- 1 tbs of honey
- 1 tsp of balsamic vinegar
- 1/2 a lime juice
- 1/2 tsp of salt
- 1/2 tsp
- 1 tsp of paprika
Directions
- Wash and dry your arugula and add it into a bowl with your arugula, shaved almonds, and parmesan (optional).
- In a separate bowl add in olive oil, honey, balsamic vinegar, squeeze of 1/2 a lme, and a pinch of salt to make the dressing. Whisk and set aside the dressing until you are ready to eat the salad.
- Season your chicken breast with salt, pepper, and paprika.
- On a medium head, place your chicken into a saucepan until cooked through. You can also bake your chicken.
- Take the chicken out when cooked and let it rest for 10 minutes so the chicken can soak up all the juices.
- Add the dressing into the salad and top with chicken breast.
