Arugula Chicken Salad Recipe

A delicious and easy Arugula salad with some chicken breast. Healthy and delicious way to get your nutrients in! A must-try for any salad lovers. 

Serving Size: 2

Ingredients: 

  1. 1 chicken breast 
  2. 4 cups of arugula 
  3. 1/4 cup shaved almonds 
  4. 1/4 cup cranberries 
  5. 1/4 shaved parmesan (optional) 
  6. 3 tbs of olive oil 
  7. 1 tbs of honey 
  8. 1 tsp of balsamic vinegar 
  9. 1/2 a lime juice 
  10. 1/2 tsp of salt 
  11. 1/2 tsp
  12. 1 tsp of paprika  

Directions

  1. Wash and dry your arugula and add it into a bowl with your arugula, shaved almonds, and parmesan (optional).
  2. In a separate bowl add in olive oil, honey, balsamic vinegar, squeeze of 1/2 a lme, and a pinch of salt to make the dressing. Whisk and set aside the dressing until you are ready to eat the salad. 
  3. Season your chicken breast with salt, pepper, and paprika. 
  4. On a medium head, place your chicken into a saucepan until cooked through. You can also bake your chicken.
  5. Take the chicken out when cooked and let it rest for 10 minutes so the chicken can soak up all the juices. 
  6. Add the dressing into the salad and top with chicken breast. 
  7. Enjoy!
