This Chipotle Chicken and Cilantro Lime Rice will have you feeling that chipotle cooked your meal. This is also a great quick and healthy meal prep idea for the week.
Serving Size: 3-4 meals
Ingredients:
- 3-4 chicken breasts
- 1 cup of rice
- 1 cup of chipotle peppers in adobe sauce
- 1 cup of diced onions
- 4 garlic cloves
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp of black pepper
- 1/2 - 1 cup of water
- 1 cup of water
- 2 limes
- 1 tsp of salt
- 1 bunch of cilantro
Directions
- Simmer water and cook rice. You can use any type. After your rice is cooked, drain and cool for 30 minutes.
- Mince up 1/2 the bunch of cilantro and add intro cooked rice.
- Squeeze in 1-2 full limes depending how much you like a'limey' taste. I usually go with 2 limes.
- Salt to taste the rice. You won't need much depending on how much lime you use. Put aside while we work on the chicken.
- Add in diced onions, garlic, chipotle adobo peppers, oregano, cumin, 1 tsp of black pepper, 1 tsp of salt into a bowl and mix well.
- Throw the chipotle pepper mixture into a blender and start with 1/2 a cup of water and add that into the blender as well. Blend. If the sauce is too thick slowly add in the water. This should be a semi thick sauce but still pretty liquid. Almost like pancake batter consistency.
- Throw this marinade onto the chicken and marinade for up to 4 hours. If you are short on time, you can skip this step but I would recommend at least 30 minutes.
- Pan fry on a medium heat or bake your chicken at 400 F for about 15-20 minutes.
- Dice your chicken, plate with some rice, or meal prep for a later meal.

How much rice? It’s not in the ingredient list. 1 cup?
