Chipotle Chicken & Cilantro Lime Rice Recipe

This Chipotle Chicken and Cilantro Lime Rice will have you feeling that chipotle cooked your meal. This is also a great quick and healthy meal prep idea for the week. 

Serving Size: 3-4 meals    

Ingredients: 

  1. 3-4 chicken breasts 
  2. 1 cup of rice 
  3. 1 cup of chipotle peppers in adobe sauce 
  4. 1 cup of diced onions 
  5. 4 garlic cloves 
  6. 1 tsp oregano 
  7. 1 tsp cumin 
  8. 1/2 tsp salt 
  9. 1/2 tsp of black pepper 
  10. 1/2 - 1 cup of water 
  11. 1 cup of water
  12. 2 limes 
  13. 1 tsp of salt 
  14. 1 bunch of cilantro 

Directions

  1. Simmer water and cook rice. You can use any type. After your rice is cooked, drain and cool for 30 minutes. 
  2. Mince up 1/2 the bunch of cilantro and add intro cooked rice. 
  3. Squeeze in 1-2 full limes depending how much you like a'limey' taste. I usually go with 2 limes. 
  4. Salt to taste the rice. You won't need much depending on how much lime you use. Put aside while we work on the chicken. 
  5. Add in diced onions, garlic, chipotle adobo peppers, oregano, cumin, 1 tsp of black pepper, 1 tsp of salt into a bowl and mix well. 
  6. Throw the chipotle pepper mixture into a blender and start with 1/2 a cup of water and add that into the blender as well. Blend. If the sauce is too thick slowly add in the water. This should be a semi thick sauce but still pretty liquid. Almost like pancake batter consistency. 
  7. Throw this marinade onto the chicken and marinade for up to 4 hours. If you are short on time, you can skip this step but I would recommend at least 30 minutes. 
  8. Pan fry on a medium heat or bake your chicken at 400 F for about 15-20 minutes. 
  9. Dice your chicken, plate with some rice, or meal prep for a later meal. 
  10. Enjoy!
