Double Bacon Smash Cheeseburger Recipe

A burger is just an amazing creation of humans. And if you add a little smash action on top of that, with some caramelized onions, bacon, and some sauce...I swear someone is kissing the sky. Enjoy the recipe.  

Serving Size: 2-3 burgers

Ingredients: 

Burger Marinade 

  1. 1.5 lb of 80/20 beef (Should get you 6 balls) 
  2. 1 egg 
  3. 1 tbsp garlic powder 
  4. 1 tbsp paprika 
  5. 1/2 tbsp Worcestershire sauce 
  6. 1/2 tbsp soy sauce 
  7. 3/4 tbsp kosher salt 

Burger Sauce: 

  1. 4 tbsp of Mayo 
  2. 1/2 tbsp of pickle juice 
  3. 3/4 tbsp mustard 
  4. 1 tbsp siracha 
  5. 1/2 tbsp  Worcestershire sauce 
  6. 1 tsp light soy sauce 
  7. Squeeze of 1/4 a lemon 
  8. pinch of salt 

Caramelized Onions 

  1. 2 large white onions 
  2. 2 tbs of oil 
  3. 1/2 tbs of sherry 
  4. Salt 

Other Ingredients 

  1. 1 packet of bacon. Whatever you like is fine. 
  2. 6 slices of Cheddar Cheese 
  3. 3-4 Brioche buns 
  4. 1/4 stick of butter 

Directions: 

Hollandaise Sauce Directions 

  1. Add all the ingredients for the beef marinade and mix. 
  2. Create some balls a little larger than a golf ball and let in sit in the fridge for 30 minutes to 2 hours. 
  3. Add all the ingredients together for the burger sauce and mix till you have a smooth consistency.
  4. Get a pan on low and add in 2 tablespoons of oil. Add in your sliced onions and a nice pinch of salt. Keep sautéing till you have a golden and slightly burnt edges.
  5. When fond is starting to stick to the bottom (about 30 minutes) of cooking the onions, add in your sherry. This will take about 45 minutes - 1 hour. 
  6. Bake your bacon ad 375 F for about 15-20 minutes. 
  7. Butter to a new pan and toast the inside of your brioche buns. 
  8. Cut up some lettuce. 
  9. Get your burger meat out from the fridge. 
  10. Get a pan on medium high heat and smash your burger down. Use a spatula or a burger smasher. 
  11. Salt and pepper one side and add on some burger sauce on top of seasoning. 
  12. Flip after 2 minutes or crust of burger start turning dark. 
  13. Add cheese onto the new side and cover. 
  14. As soon as cheese is melted (30 seconds -1minute) remove and stack your burgers. 
  15. Plate the burger starting with the bottom bun, a little burger sauce, your burgers, bacon, caramelized onions, lettuce, and some more burger sauce and top bun.
