Everything Bagel + Bacon egg and cheese

A bacon, egg, and cheese on an everything bagel is a New York classic. I had this all the time growing up. And trust me, making a bagel at home isn't hard and tastes amazing. Hope you enjoy!

Yeast Contraption 

  1. 1 + 1/2 tsp of yeast 
  2. 1/2 + 1/8 cup of water (1+2 tbs if needed)  
  3. 1/2 tbs brown sugar 

Dough 

  1. 1 tsp of salt 
  2. 260 grams (2 cups bread flour) + some to kneed
  3. 1/2 tbs brown sugar 

Boiling water: 

  1. A ton of water 
  2. Squeeze of molasses (1-2 tbs) 

Sandwich: 

  1. Everything Seasoning 
  2. 2 eggs 
  3. Bacon 
  4. American cheese
  5. Salt + pepper 

 

 

Method: 

  1. To a separate cup, add in water, brown sugar, and yeast and let it sit for 15-20 minutes. 
  2. In a separate large bowl, add in salt, bread flour, brown sugar, and yeast contraption and mix. 
  3. On a very lightly floured surface, kneed for 15 minutes until dough is completely smooth. You might need a touch of water but make sure not to add too much. It should still have a little stick to it.
  4. Oil up the same mixing bowl and place dough in there covered for about 1-2 hours or until doubled in size. Keep it in a warm dark place. I usually keep it in my oven with the oven light on. 
  5. Take the dough out and separate into 4 equal parts and roll it into a ball. Do this by taking the ends of the triangle and tucking it into the middle. Then roll with the claw motion. Let it rest covered for 5 minutes. 
  6. Shape the balls into bagels and place on a tray. You can either poke a hole in the center or do the hand rolled method.
  7. OPTIONAL: This is optional, but you can let it rest in the fridge for up to 24 hours covered but you can cook it right away as well. Resting in the fridge will give you the best bagels but it’s optional. Skip this step and go to 8 if you don't want to rest in the fridge. 
  8. Mix water and molasses together and bring it up to a boil. 
  9. Add your bagel into the boiling water and cook for 1 minute on each side. 
  10. Take it out and hit it with your everything seasoning right away. 
  11. Preheat the oven to 425 and place your bagels in for about 20 minutes or until browned. Center wrack.
  12. Take it out and let it cool down for about 10 minutes 
  13. Cook bacon and eggs however you like and melt American cheese on the eggs.
  14. Assemble your bagel and enjoy!
