Pad See Ew with beef is one of my go to's and favorite dishes. The perfect balance of sweet and savory with some juicy noodles. This is the perfect dish to have on the couch watching Netflix. Enjoy!

Ingredients:
Stir Fry Sauce
- 3 tbsp oyster sauce
- 3 tbsp soy sauce
- 2.5 tsp of fish sauce
- 3 tsp of golden mountain sauce
- 3 tbs of brown sugar
- 3 tsp Thai black soy sauce
- 1 tbs water
Beef Marinade
- 1/2 lb chuck
- 1/2 tbs of corn starch
- 1/2 tbs of soy sauce
- 1 tbs of oil
- 1 tsp baking soda
Stir Fry Ingredients
- 3 leaves of Chinese broccoli
- 2 garlic minced
- 1 egg
- Pinch of sugar (if needed)
Direction
- Cut up your beef into thin strips and place into a bowl.
- Into the same bowl as the beef, add in your beef marinade and let it rest for 30 minutes.
- Cut your Chinese broccoli into 3 pieces. The bottom stem which you should slice into thin slices. The middle stem, which is fine to be around 1 inch, and then the leaf. Set aside.
- Mince up 2 pieces of garlic. Set aside.
- Scramble one egg into a bowl, set aside.
- In a separate bowl, add all the stir fry sauce ingredients and mix.
- Get medium high heat wok going, add enough oil to pan fry your beef. I deep fried mine in the video but either work. about 1/2 an inch of oil.
- Add in your beef and cook till 90% cooked inside. This will take about 2-3 minutes depending on thickness. Set aside once cooked.
- Remove most of the oil and keep enough to cook vegetables. Add in your broccoli stems and cook for about 3 minutes or soften.
- Add in your leaves and cook for about 2 minutes or until shrunk in size.
- Push over to a side and add in a small amount of oil and throw in garlic. cook till fragrant and mix everything together.
- Push over to the side once again and scramble egg and mix everything together and remove to a separate bowl.
- Clean your Wok down with a paper towel. In the same wok, turn to a high heat and add in rehydrated noodles (follow package instructions to rehydrate) and add in a little over 3/4 of the sauce. Give it 1 to two flips to coat the noodles in the sauce and let it sit without touching it for about 2 minutes or until charring start. Flip and let the other side sit for 2 minutes. At this point the sauce should be pretty good and absorbed into the noodles. Feel free to flip once or twice more to coat and caramelize the noodles.
- Add in your vegetables, eggs, and beef, mix well and taste. At this point the meal is done but you might need an extra boost of sugar. For mine, I added a pinch. If you also want more sauce, use the remaining 1/4 of the sauce and Sautee.
- Serve and enjoy while hot.
