Pasta Carbonara

Ingredients

  1. 1/2 box of Bucatini pasta  
  2. 1/2 cup parmesan 
  3. 1/3 cup pecorino 
  4. 3 egg yolks 
  5. 1 egg 
  6. Black pepper 
  7. Guanciale  

Directions: 

  1. Add pasta into boiling hot water lightly salted and cook till about 1 minute under al dente. 
  2. Add guanciale into a cold pan and turn up to medium low and render out fat till crispy. 
  3. Add egg yolk, egg, cheese, black pepper, and 2 tsp of guanciale fat into a bowl and mix 
  4. You can you the double boiler method to thicken up the sauce slightly 
  5. Add the pasta and guanciale into the bowl and mix until sauce thickens up. 
  6. Plate and top it off with more guanciale, cheese, sauce, and freshly grounded black pepper. 
  7. Enjoy
