Ingredients
- 1/2 box of Bucatini pasta
- 1/2 cup parmesan
- 1/3 cup pecorino
- 3 egg yolks
- 1 egg
- Black pepper
- Guanciale
Directions:
- Add pasta into boiling hot water lightly salted and cook till about 1 minute under al dente.
- Add guanciale into a cold pan and turn up to medium low and render out fat till crispy.
- Add egg yolk, egg, cheese, black pepper, and 2 tsp of guanciale fat into a bowl and mix
- You can you the double boiler method to thicken up the sauce slightly
- Add the pasta and guanciale into the bowl and mix until sauce thickens up.
- Plate and top it off with more guanciale, cheese, sauce, and freshly grounded black pepper.
