An absolutely iconic dish from the Pixar film Ratatouille. A tru vegan, plant based dish that will blow your mind with the taste and very pleasing to the eye. So easy anyone can make with some patience and determination.
Ingredients:
Sauce Ingredients:
- 4-5 tomatoes on vine
- 2 red bell peppers
- 6 garlic cloves
- 3 small shallots
- 1 stem of basil
- 5 thyme sticks
- 1-1.5 tsp of salt
- 1 tsp Black pepper
- 1 tsp sugar
Vegetables on top of sauce Ingredients:
- 4 roma tomatoes
- 2 squash
- 2 zucchini
- 2 Chinese eggplants
- Salt
- Pepper
- Olive Oil
Sauce Instructions:
- Remove the center of tomatoes on vine and cut an x on the bottom of the tomato.
- Boil water and shut of heat and then add in tomatoes from the vine for about 20-30 seconds then immediately put into an ice bath
- Remove skin from the tomato and cut into fourths
- Remove seeds and stem from red pepper and place on a baking tray with tomatoes and put it into a low broil for about 10-15 minutes or until red peppers have some char.
- Remove and after the red peppers and tomatoes have cooled, roughly chop them and the tomatoes.
- Add shallots and garlic onto a medium heat pan and sauté until onion is translucent. Add in thyme and basil. Add in red pepper and tomatoes.
- Remove and add into a blender and add in sugar, salt, and pepper.
- Add sauce to a pan and reserve about 1/4 C for plating.
- Cut roma tomatoes, squash, zucchini, and eggplant into even slices.
- Place them into the pan with the sauce in a circular motion starting along the edges and into the middle.
- Drizzle some olive oil, salt, and pepper to finish. Place a parchment paper above it.
- Throw into an oven at 375 degrees F for 1 hour.
- Plate and enjoy.
