SPAM Teriyaki Fried Rice

A delicious way to have some SPAM and rice at home. And might I add… better than any takeout fried rice?? Try it out and enjoy! A super easy, super flavorful comfort meal you can throw together with pantry staples.

Servings: 3-4 

Ingredients 

Spam Fried Rice 

  • 4 cups cooked day-old white rice
  • 1 white onion, diced
  • 3 green onions (whites + light greens separated from dark greens)
  • 1 medium carrot, diced
  • 1 egg
  • 4 garlic cloves, minced
  • 1.5 tbsp sesame oil
  • 1/2 tbsp sugar
  • 1 tsp MSG
  • Salt to taste
  • Neutral oil
  • ~10 tbsp teriyaki sauce total
    • 3 tbsp for the Spam
    • 4–7 tbsp for the rice (adjust to taste)

Teriyaki Sauce

  • 3/4 cup soy sauce
  • 4 garlic cloves, roughly chopped
  • 1/2 inch ginger, roughly chopped
  • 2 green onions, roughly chopped
  • 2 tbsp sake
  • 1/4 cup + 1.5 tbsp mirin
  • 4.5 tbsp sugar
  • 1 tbsp honey
  • 2 tbsp bonito flakes
  • 3 small kelp squares (or 1 kombu strip)
  • Neutral oil

 

Directions: 

Teriyaki Sauce 

  1. Heat a small amount of oil in a pan over medium. Add garlic and ginger; cook until fragrant.
  2. Add sake and reduce by half.
  3. Add soy sauce, mirin, sugar, honey, and green onions. Simmer 3–4 minutes on medium-low.
  4. Add bonito flakes and kelp and simmer 1 more minute.
  5. Strain through a fine-mesh strainer and let cool.
  6. Optional: Add a pinch of sesame seeds for extra aroma.

Spam 

  1. Cut Spam into small cubes. Heat 1 tbsp oil in a pan over medium.
  2. Cook Spam until golden and crisp.
  3. Add 3 tbsp teriyaki sauce and cook 1–2 minutes until sticky and well-coated.
  4. Remove and set aside.
  5. Add a little more oil, scramble the egg, and set aside.

Fried Rice

  1. Add more oil to the pan and increase heat to medium-high.
  2. Add white onion, green onion whites/light greens, and carrots. Sauté 2 minutes.
  3. Add the rice and break up any clumps, mixing to distribute the vegetables evenly.
  4. Add 5 tbsp teriyaki sauce around the edges of the pan and toss vigorously.
  5. Add the cooked scrambled eggs and mix to incorporate.
  6. Taste and adjust—usually 2–3 more tbsp of teriyaki sauce. The color and flavor guide you here.
  7. Add sesame oil, sugar, MSG, and mix well. Season with salt to taste.
  8. Stir in the cooked Spam.
  9. Garnish with the dark green parts of the green onions and serve hot.
