Steak tacos are such a delight to eat. These are a bit more authentic but feel free to dress them up however you like! I love to add some caramelized onions, cheese, and different sauces. Enjoy!
Steak Marinade
- 1 lb skirt or flank steak
- 1/2 a large white or Spanish onions thinly sliced
- 1 bunch of cilantro chopped
- 1 jalapeno diced
- 4-5 garlic minced
- 1 tsp of cumin
- 1/2 tsp black pepper
- 1 tsp oregano
- 1.5 tsp of chili powder
- 2.5 tbs of soy sauce
- 2 tbsp of oil
- 1 juice of a lime squeezed
- 1/2 large orange juice
Chimichurri Sauce
- 1/3 cup of olive oil
- 2 gallic cloves minced
- 1 red chili minced finely or green Thai chili
- 1/2 a head of cilantro minced (about 1/3 cup)
- 1/2 tsp oregano
- 1 tbsp red wine vinegar
- 1/2 tsp balsamic vinegar
- 1/2 lime freshly squeezed
- 1 tsp of salt (or to taste)
Corn Tortillas
- 1 cup of corn flour
- 1/2 tsp of salt
- 3/4 cup of hot water (up to 1 cup if needed)
Toppings:
- 1 diced white onion
- Cilantro for garnish
Directions:
- Combine steak marinade and add in steak and let it sit for 1 hour up to overnight covered. You can cook it right away if you are crunched for time but the longer the better here.
- Combine all chimichurri sauce ingredients together in a bowl and let it sit for at least 1 hour and overnight for best flavor.
- On a high heat, add in about a tbsp of oil to coat the pan and place steak in. Get a nice sear and flip about 2 minutes. Cook to desired doneness. Set steak aside to rest and hit it with a sprinkle of salt right away.
- In a separate mixing bowl, combine corn flour, salt and hot water and mix.
- Combine and kneed. The dough should feel a little bit smoother than playdough. If too dry, add in more water but you shouldn’t need more than 1 cup of hot water.
- Let the dough rest covered for 10 minutes.
- Remove a small ball of dough from the main one and roll it up and press it under the tortilla press. If you don’t have one, hand push it out starting from the middle and out to the edge. Careful not to rip the dough.
- In a cast iron pan or skillet, throw on your flattened tortillas until it has some char and remove.
- Serve warm with tortilla, steak, white onions, cilantro, and chimichurri sauce.
