Sticky Toffee Pudding Recipe

This recipe is for 6 cupcakes! 

Batter Ingredients

  1. 4 oz of pitted dates 
  2. 3/4 C of water 
  3. 2.5 tbs of butter soften 
  4. 1/2 C of brown sugar 
  5. 1 tsp of vanilla 
  6. 1 egg 
  7. 1.5 tbs molasses 
  8. 1 tbs golden syrup 
  9. 3/4 cups of flour 
  10. 1 tsp baking powder 
  11. 1/2 tsp baking soda 

Toffee Sauce Ingredients  

  1. 2 tbs of butter 
  2. 1/4 C whipping cream 
  3. 2 tbsp of brown sugar 
  4. 1/2 tbs of molasses 
  5. 1 tbsp of golden syrup 
  6. 1 tsp vanilla extract 

Directions: 

  1. Take the water and dates and boil them for a few minutes to rehydrate the dates 
  2. Add softened butter brown sugar, butter, and vanilla and mix well. Then add in egg and mix again. 
  3. Add in molasses and gold syrup and mix. 
  4. Add dry ingredients (flour, baking powder, baking soda) a third at a time and mix into the batter. 
  5. Blend the dates and water mixture to make a puree and add into the batter. 
  6. Put into a cupcake tray that has been greased with butter and flour and into the oven at 350 F for about 18-20 minutes. Make sure the center doesn’t over cook. Put a toothpick into the middle and if the batter is not running and a little sticks to the toothpick it’s done. You want it to be tiny bit moist coming out of the oven. 
  7. Put all the ingredients for the toffee sauce and simmer for a few minutes till well combines
  8. Pour over sauce on the toffee pudding while hot and serve.
