This recipe is for 6 cupcakes!
Batter Ingredients
- 4 oz of pitted dates
- 3/4 C of water
- 2.5 tbs of butter soften
- 1/2 C of brown sugar
- 1 tsp of vanilla
- 1 egg
- 1.5 tbs molasses
- 1 tbs golden syrup
- 3/4 cups of flour
- 1 tsp baking powder
- 1/2 tsp baking soda
Toffee Sauce Ingredients
- 2 tbs of butter
- 1/4 C whipping cream
- 2 tbsp of brown sugar
- 1/2 tbs of molasses
- 1 tbsp of golden syrup
- 1 tsp vanilla extract
Directions:
- Take the water and dates and boil them for a few minutes to rehydrate the dates
- Add softened butter brown sugar, butter, and vanilla and mix well. Then add in egg and mix again.
- Add in molasses and gold syrup and mix.
- Add dry ingredients (flour, baking powder, baking soda) a third at a time and mix into the batter.
- Blend the dates and water mixture to make a puree and add into the batter.
- Put into a cupcake tray that has been greased with butter and flour and into the oven at 350 F for about 18-20 minutes. Make sure the center doesn’t over cook. Put a toothpick into the middle and if the batter is not running and a little sticks to the toothpick it’s done. You want it to be tiny bit moist coming out of the oven.
- Put all the ingredients for the toffee sauce and simmer for a few minutes till well combines
- Pour over sauce on the toffee pudding while hot and serve.
