If you want an amazing way to start your morning or even a late lunch, Fried Chicken and waffles are the way to go! Waffles do take a little skill to make and depending on your ingredients such as the brand of flour you are, it could require you to make some adjustments on the fly. I'll leave some tips in the recipe.
Notes:
- If your batter turns out too thick, add in some extra buttermilk to thin it out.
- if your batter turns out too thin and runny, add in some extra flour to thicken it.
Ingredients:
- 1 cup AP Flour
- 1/4 cup cornstarch
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 tbs sugar
- 1 tsp salt
- 2 cup + (1/4 if needed)
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp Cinamon
- 1 egg (egg yolk and white separated)
Method:
- Add the dry ingredients flour, corn starch, baking soda, parking powder, sugar, salt, and cinnamon and whisk and set aside.
- In a separate bowl, add in your wet ingredients of buttermilk, oil, vanilla extract and egg yolk and whisk until well combined.
- With a hand blender, mix your egg whites till stiff peaks form. about 2-3 minutes.
- Add your wet batter into your dry and mix. If it is too thick and not batter like, add in 1/4 cup of buttermilk at a time. If it is too runny, add in some more flour.
- Fold in your egg white mixture until batter is partially smooth with a few bumps. Don't over mix here.
- Let your batter rest for about 15 minutes.
- Dump some of your batter onto your waffle maker and cooking according to instructions. Usually this is about 4-5 minutes depending on your machine.
- Take it out and let it rest on wire rack to cool down and enjoy!
